A few simple ingredients, a few simple steps and voila you have a tasty protein packed chilli con carne that can be enjoyed as main meal or a healthy lunch!
500g lean minced beef (extra lean if available)
1/2 tsp chilli powder
1/4 tsp ground cumin
1 onion diced
2 cloves garlic minced
400g can chopped tomatoes
1 200g can salsa
4 tbs tomato paste
250g can kidney beans
3 tbsp chilli powder (to taste)
Cook beef mince in a pan along with chilli powder and cumin until the meat is browned. Drain and set aside.
In the same pan saute onion and garlic until tender. Add the cooked meat and beans and heat on high. Add salsa, water and tomato paste. Simmer for 20 minutes.
Add kidney beans, salt and pepper. Turn heat down to low and simmer for 1 hour covered.
Serve with wholegrain rice, wholegrain Quinoa or alternatively wholegrain wraps.
